Mexican Cooking in Salzburg
Mexican food is an old-time favourite, yet it is not easy to find authentic cooking on this side of the globe. Die Cabreras do a great job in Salzburg, no question, but if you feel like having a tasty (and hot) bite in the comfort of your home, Regina can teach you how. Her kitchen is creative (she works primarily with local and regional ingredients) and crafty. As a former nurse, a profession where her huge heart transformed and touched many lives for over thirty years, she is also aware of the importance of a balanced and healthy diet. Regina is known in the Mexican community in Salzburg for her skill and passion in the kitchen, her good mood and her kind spirit. We get to enjoy one of her staple recipes on this blog:
1 small sized onion
1 clove of garlic
1 ripe mango (use mango out of a can for emergencies!)
1 habanero chilli
2 tablespoons of white balsamic vinegar
2 tablespoons of oil (olive or sunflower seed will do)
Optional: 1 tablespoon of raw cane sugar (if the mango is not sweet enough)
and water if needed
Cut the onion and sauté it in the oil, add the garlic and the chilli (without the seeds to take some of its intensity away), once they are slightly brown, add the mango, the vinegar and the salt. Puree and use some water for a more saucy consistency if needed; eventually some sugar if you didn’t have luck with the mango.
Use this salsa on rice, in a wrap or simply with tortilla chips. Be careful, though, this recipe is highly addictive and also HOT!
